The Best Loaded Blueberry Muffins

The Best Loaded Blueberry Muffins
INGREDIENTS
1 1/4 cup sugar
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup whole milk
1/4 cup melted coconut oil
1/3 cup melted butter
1 1/2 teaspoons vanilla extract
2 cups fresh blueberries
1/2 jar wild blueberry jam
DIRECTIONS
Preheat oven to 350 degrees. Line a standard muffin tin with non stick muffin liners.
Whisk the sugar, flour, baking powder, and salt together in large bowl, set aside.
In a separate bowl whisk the eggs, milk, coconut oil, butter, and vanilla extract together in medium bowl until combined.
Fold the dry mixture into wet mixture, along with fresh blueberries until just moistened, careful not to over mix.
Divide batter equally among prepared muffin cups (batter should completely fill cups and mound slightly). Spoon teaspoon of blueberry jam into center of each muffin. Using a toothpick gently swirl berry filling into batter using figure-eight motion. Sprinkle with a little sugar over top each muffin (optional).
Bake for 17 to 19 minutes or until golden brown. Cool muffins in muffin tin for 5 minutes, then transfer to wire rack to cool.
